How have you been, my lovelies? I’m doing great, I get so much energy from my “newly discovered” hobby (photography and styling), it’s amazing! 😉 Every other day I try to make something yum in the kitchen and as long as there’s still light outside, I rush out with a plate and snap a photo. I don’t find it exhausting as cooking relaxes me and I need a good meal to wrap up the day anyways.
The perfect summer dessert for me is fruit, preferably with a little twist- be it some vanilla sugar, chocolate coating or a simple dash of rosé. And since rhubarb is in season, what better way to treat yourself than putting together a compote to chill you down in the evening hours. We’re experiencing full summer in Norway, almost a heat wave, I’d say. And as it always is when you’d rather be at the beach, I’ve been working in court these days and so I had to dress accordingly. However, when I finally get home, it’s off with all the office clothes, on with the bikini, sparkling wine in hand and dessert on my mind. 😉
No, the apartment was not sold on the first round of home inspections and yesterday I was both furious and sad, mostly because nobody could realise what a great home this has been for me and see herself living here. But I snapped out of it pretty fast, relieved that V contacted the engineer and the real estate agent to correct a bunch of information regarding the bathroom and now we’re having a new “open house” again on Sunday, meaning I’ll be living on display until then.
Today was the 17 of May, Norway’s national day and we didn’t even get out of the house. And I loved every second of it! We did have both Prosecco, Cremant and Champagne, which implied a couple of naps on the couch watching crime. Again, how much better can it get? Both of us were tired, the weather was crappy and we had nowhere to be and so staying at home with good food and some slightly burned meringues (I made a batch yesterday, while angry about the lack of a bidding round) felt like the perfect thing to do.

I’m out of town for a couple of days, this time in Kristiansand. It’s a pretty town in Southern Norway and although I haven’t gotten the chance to see much of it, what I’ve seen so far is pretty promising. My friend Svetla, who’d been here recently, urged me to book a room at the new Scandic hotel, by the “city beach”. Although this meant walking to the courthouse for a whole 5 minutes (and I’m incredibly lazy in the morning!), I reckoned it would probably do me good to have nice surroundings, a view and a spa on top of that!
A couple of weeks ago my friend Marion gave me a bag of chanterelles and I was thrilled! I thought to myself- I´ve just had some risotto porcini the other day, already made my yearly chanterelle stew , don’t feel like fussing with the process of pickling, but I have to do something super yummy with them!;-) Continue reading
