A couple of weeks ago my friend Marion gave me a bag of chanterelles and I was thrilled! I thought to myself- I´ve just had some risotto porcini the other day, already made my yearly chanterelle stew , don’t feel like fussing with the process of pickling, but I have to do something super yummy with them!;-) So I googled a bit and decided for pizza. My friend Kjersti, whom I hadn´t seen for ages, came over with her dog Delvi and we had a blast. Two furry fluffs running around and kissing us and each other, good wine and some good old-fashioned gossip, mostly about boys. 😉
Ingredients:
For the dough:
- 500 g flour
- 1/2 bag dried yeast
- 1/2 ts salt
- ca. 3.5 dl water
- 1 tbs olive oil
For the topping:
- chanterelles
- red onion
- Kalamata olives
- chèvre
- dried tomatoes
- a good olive oil
Make the pizza dough by mixing flour, dried yeast and salt, then pour water and olive oil little by little until the mass is smooth and even. Cover and keep in a warm place until it´s reached its double size, around an hour. When the dough is ready, knead it into a rectangular-shaped form and top it with the “forrest´s gold” and the rest of the ingredients. 😉
10-15 min. in the oven at 200 C. Serve with salad or just wine. 😉 Enjoy!
