Yesterday I paid a visit to the local organic marked at Stortorvet and couldn´t resist buying some fresh corn, apples and chanterelles. I don´t know about you, but I love me some chanterelles in the fall! Although I´ve only made this stew the last 2-3 years, it´s one of my classics by now! Not only pretty and yummy, but very easy to put together, too. I usually serve it with pan-fried chicken and rice.
You need:
250 g chanterelles
1 large onion
1 cup of creme fraiche
thyme
salt
pepper
curry (for color)
butter
olive oil
Sear onion in a mix of butter and olive oil until golden and soft. Add the chanterelles and the thyme. Stir and let them soak a bit. Add salt, pepper and curry, then creme fraiche and let it boil for 5-10 minutes. Serve with rice and chicken! Voilà! Bon appetit!
