As promised, here’s the espresso cookie recipe. I didn’t manage the deed yesterday, too tired for that (I actually fell asleep on the couch at 10:30 pm!), but today I got around to do it. After lazying around for the better part of the day, eating cold pizza for breakfast and pasta with a bit of this and that for lunch, I felt it was time to do some baking and then, in the middle of it, I realised I lacked an egg. So I knocked on the neighbours’ door and they didn’t have, either, they’d just eaten them for breakfast, but they invited me and Sammy to stay a bit and have a cup of tea. Yesterday we had guests and I thought I´d try something different for dessert, aside from my regulars: dark chocolate cake, Pavlova or chocolate mousse. I´d never made Panna cotta before, but it looked easy enough, so I found a recipe that looked yummy and yet not so complicated. It turned out amazing!
Since Monday, my strict low-carb diet is over and I´ve been trying to eat healthy and stay off the worst types of food. I even signed a monthly membership at the gym where a friend of mine goes, so I´d have to stick to our deal. I´ve already been to yoga and every single muscle of my body has been hurting ever since. 😉 I´ve made a new appointment for pilates on Monday, meanwhile, I try to stick to my abs and squats on an everyday basis.
What did change though is my desire for sugar. We went to a couple of parties and I indulged in a little bit of cake there, a pannacotta here, you know the drill. And all I think of is sugar! Grrrr! Thought I´d share a couple of pictures from Pinterest, hoping I won´t need to taste them as long as I can rest my eyes upon them, the way I sometimes do with shopping. Have you tried? Fake chocolate mousse with avocado
Trust me, it´s really yummy! For all the healthy life- enthusiasts out there, this is a really nice alternative (and much easier) than the real deal.
You only need:
two large avocados
1/4 cup cocoa powder
One of my New Year´s resolutions was to eat healthier. More fresh fruit and vegetables, more organic products, what better way to do it than order them right to your door through Kolonihagen? Last week was their first delivery and we got lots of goodies, including 7 yellow apples. Since neither of us is so fond of apples, let alone yellow, I had to find a way to use them. And voilà, apple muffins it is!
