One of my New Year´s resolutions was to eat healthier. More fresh fruit and vegetables, more organic products, what better way to do it than order them right to your door through Kolonihagen? Last week was their first delivery and we got lots of goodies, including 7 yellow apples. Since neither of us is so fond of apples, let alone yellow, I had to find a way to use them. And voilà, apple muffins it is!
125g butter
1-2 apples
1,5 dl sugar
2 eggs
1 tea spoon baking powder
2 spoons cream
2 spoons sugar
1 tea spoon cinnamon
Stir sugar and butter well, add one egg at a time. Sift flour and baking powder, little by little, alternate with cream.
Put the batter in big (American size) cupcakes forms, you´ll get 6 muffins. Press the apple pieces into the dough, decorate with sugar and cinnamon. Bake in the oven at 175 degrees C, 10-15 minutes. Serve with reindeers! 😉
