It was about time I made something yummy, lately food has been more of a necessity (due to lack of time, mainly) and, consequently, quite dull. But yesterday I was inspired by a recipe found here and since “I´m in money” (as we say in Romanian, meaning I got paid), thought I´d prepare something a bit fancier than frozen fish with rice and cucumber or frozen fish with mashed potatoes and cauliflower. (yes, frozen fish is cheap here!) 😉 So I got a juicy piece of entrecôte, ingredients for a pea and thyme pesto, sweet potatoes, as well as beer! 😉
And since I´m a firm believer that everything gets better with a glass of somethin´somethin´ (I´d rather have bubbles, but couldn´t be bothered to go to the Wine Monopoly for it), I had me a beer and some sticks to make cooking more fun.
Oven roast sweet potatoes: cut them into smallish pieces, pour some olive oil on them, sprinkle salt, pepper and chilli over and place it in the oven for about 15-20 minutes or until tender.
The ingredients for pesto:
1/2 bag (small) of frozen peas
30-50 g pine kernels
1/4 parmesan triangle
olive oil
salt
pepper
fresh thyme (a handful)
juice from 1 lime
Put everything in a food processor (I like that the peas are raw, it gives the pesto a delicate texture), add oil and lime juice and adjust to your taste.
Serve it with crackers or make it the dinner´s “pièce de resistance”, as we did. God, was it yummy and how come I never made it before? We´ve had white fish with pea puré several times, but this beats it! (cheese is the magic word!)
