Hey y’all! 😉 How ya’ doing? I’m pretty good. Still itching and still trying to hold my head above the water, but I’m getting good at it, so I might as well enjoy the swim. Haha! (sigh)
Yesterday I had a very short day and did very little with the rest of it, as it often happens with me and so I felt the need to make a yummy dinner and a cake on top of that, to justify my mere existence. haha!
And since I’d made a cauliflower soup a couple of days ago, I still had lots of bacon, cauliflower and cheese and some pie crust in the freezer, so I was good to go. Ingredients
pie dough, buy or make your own
a normal sized cauliflower, in small pieces
1 chopped onion
3spoons olive oil
salt & pepper
1 ss mustard
4 eggs
100ml double cream
en coffee cup grated Gruyère /cheddar cheese (regular cheese is also fine)
en handful grated parmesan
Oven temperature 180C
Roast the cauliflower with onion, bacon and 3 spoons of olive oil in the oven for 15 minutes. Bake the pie separately for 15 minutes, after having “stabbed it” with a fork to get rid of your aggression.
Spread a good layer of mustard, then add the roasted veggies and bacon and top with cream, eggs and cheese. Bake for 20-30 minutes and serve with a green salad. Bon appetite!
